A spicy Indonesian fried rice dish that includes ingredients like mutton, ikan bilis (dried anchovies), vegetables, chicken or seafood. A bull’s eye egg usually sits on top. The dish has a bold, meat stock flavour accented by sambal or pepper and is very moreish and mildly spicy.

Atie and Sham used to work for the late Sam, the second generation of a satay vendor once sited along the original Satay Club row off Beach Road in the mid 50s. They inherited the traditions of Muslim noodle craft and took it a notch further. Their Nasi Goreng Putih (white style) is a benchmark of sorts. The rice comes loose and intense with wok hei (wok's breath) and the stock and "white rempah" they use lend so much flavour, and with the crispy ikan bilis (crispy anchovies) sprinkled atop plus the dollop of sambal they place over the cucumber slices, it's absolutely memorable. Watch out for the slices of red chilli they fry it with...you will either love it or push it aside is you just want the residual heat from it.
