Mr Low Seng Kim is an accidental hawker; a friend taught him the recipe 22 years ago and he gave it a try and there was no turning back. It was an 80-year-old Makansutra Makan Mata (foodie patrol) that recommended this, and it made us question why we missed out on this stunning Nonya style mee siam all these years. He makes his own sambal (bottles it for sale) and fries the beehoon in it till soft and fluffy (not the short-cut ones that merely fry them in chilli paste and colouring). Slather his coconut laced mee siam sauce over (Nonya style), swirl his sambal in, then squeeze that lime in for the ultimate kick. But we tried the mee siam dry on its own, sans the sauce and we realised it's one of the best dry mee siam we've had (you must add more sambal and lime). But Mr Low does not sell it dry, you have to ask him. His bottles of own-made sambal is magical and the crispy ikan bilis sambal should be illegal – so roasty, crispy and spicy and addictive; it should be banned.
