The old Muslim regulars at Haig Road will tell you there are only two mee rebus stalls you should bother with at this hawker centre. This, and Afandi Hawa, just across the aisle from them. HJ Waliti’s version, just like erstwhile competitor’s, has a very dense and rich sauce and flavours with krill, bean paste and a rempah. But theirs is also enhanced with lamb parts and some fats and overall, it leans on the sweeter side of savoury. The noodles, eggs, bean sprouts, tofu, etc. are fresh but they all play secondary roles in this dish. Squeeze in the lime and it gives another level of sensation. Their die-hard regulars swear by this version and they have a reason to be so.
