They used to work for the late “Ah Sam” and they took over the stall in honour of him and how he had given them jobs and opportunities in life. Now, they upped the game – this humble Singapore Indian noodle dish (noodles don’t quite feature in Indian cuisine) here is fried exceptionally well. They are patient and won’t plate this until the noodles have absorbed all the tomato sambal goodness and are wok-roasty and ready to go. It comes looking dry but has a soft moistness to the bite. Those squirts of water to wet the wok as they fry, come into play. You can either choose chicken or the authentic version with bits of mutton chunks. Top this with a sunny egg and the show is ready to be devoured.
