After so many decades, these folks are still regarded as the benchmark gold standard in Hokkien Lor Mee. Their thick, rich and uber umami sauce, made with seafood stock and thickened with a special blend of starch, does not “break” and release the water so quickly. It will sit smooth and rich till your last mouthful (unless you are a time-lapse-slow-motion feeder). Their toppings of hand torn fried snapper fish (it holds to juiciness), fish cakes, pork etc. are freshly done and placed atop (don’t you just hate it when the ingredients have sat too long on that shelf). The flat style yellow noodles “ collect ” more sauce as you chopstick- it up and that’s the rightful version. The queue here is excruciating but no one really complains as this place has that “worth the wait” reputation.
