This is truly a Singapore-Chinese-style curry dish, originally created by the Hainanese in Singapore. The flavours, upon the first mouthful, tell you someone made sure it pleased the folks that cannot handle complex Indian-style masala curries. For starters, it is enriched with coconut milk and the masala seems mild and there’s a light hint of sambal blended in with the stock. The edge is the toppings of okra, brinjals, puff tofu, or taupok. Again, the curry on its own, slathered over the rice, is what you come here for. They also have a wide selection of chap chye (economic rice) side dishes to choose from. Their sambal sotong or squid, spicy cockles, stir-fried greens, fried chicken, etc. give this a truly Indian-inspired Chinese meal experience. They have many outlets but this is the flagship stall we are rating.
