Melvin Chew took over his father’s braised duck and kway chap stall with the help of his mother and sister. He is one of the most popular online hawkers in Singapore, often quoted and featured in media. Their brand of Teochew style braised duck and kway chap (braised pork offals and rice sheet noodles) uses a very complex “lo sui” or braise recipe. We’ve had the pleasure of seeing them in action and it’s nothing like anything you see on YouTube or any cookbook for the matter. Every such hawker has their own magic mojo recipe and this one uses among many others, dried herbs and vegetables in the magic brew. One mouthful and yo u get the idea that it’s impossible to figure out the ingredients. They make their own chilli sambal and that alone is a star feature itself. The offals are softly braised and devoid of any pong and the duck slices are moist and juicy and inherit the braise sauce.
