Kiam Chye Ark is a South Chinese inspired sour and salty broth of duck and preserved mustard greens, tomatoes, sour plum and sometimes even wild star fruit. This is an appetising Teochew soup that requires considerable skill to brew and is great with jasmine rice. You may need a dip of soy sauce with chilli to kick it up a few notches.

Their braised duck and belly pork rendered in a bold and lightly herbal dark soy braise sauce is noteworthy and worth your time and calories- the duck is just short of being too soft and the pork has a nice bite with skin and fat intact. But the star dish is the kiam chye ark, they boil chunks of this gamey fowl with touches of ginger, and array of herbs plus pickled plums with a touch of pepper. The combination tames the gamey-ness and the light herbs, the tangy plums and kick from the pepper is arresting and temts you to eat this with a bowl of rice, like how it should be. That piece of duck comes fork-soft and it takes in the flavour of that complex stock.
