From the Middle East, we have this delicious and hearty vegetarian soup made up of coarsely blended kidney beans, stewed in stock and spices, topped with sliced onions, chillies and a fried egg. They serve the phool on a shallow plate with a hunk of crusty bread for the dip to mop it up with.

This bowl of fava and kidney bean mash done with spices and stock, called foul-medames, has roots in the Middle East. The folks here do it rich and gently spicy and top it with a runny egg, onions and green chillis for extra texture and oomph. You take that bowl of sliced baguette (which comes with it) and dunk it in, and scoop up the kacang pool, some runny egg a long the way and tear in. Don’t let the visuals fool you, it is a meal on its own.
