Ipoh, in Malaysia, is famous for her smooth and silky rice noodles. The locals attribute the texture to their natural spring water supply which has a good alkali content. Ipoh hor fun is thin ribbon rice noodles drenched in a thick often starchy and savoury gravy, topped with vegetables, braised mushrooms, shredded chicken, seafood and fried shallots.

Go for the most extravagant item here – the prawns and crayfish hor fun slathered with a clear sauce densely flavoured with chicken, crayfish and prawn stock. The clarity of the stock base shines through and it is thickened with starch to smoothen it. They rim it with some greens to add texture. The crayfish and prawns are extremely fresh (from reliable suppliers they had been working with for a few decades now). Otherwise, have it with the shredded chicken pieces and prawns which is equally adorable and scrummy.
