Makansutra Singapore Food Ebook 2023/24

The range of Indian dishes in Singapore originally hailed from the South, like Tamil Nadu, Kerala and even Andhra Pradesh. The Roti Prata is one classic that came this way because of migrant culture. But now, more flavours of Central and Northern India are making its way here. We find the Northern Mogul Cuisines and also vegetarian Thali set dishes from Rajasthan.

It's a lesser known banana leaf Indian restaurant that's known only among their regulars and Indian food fans. Their parent company deals in Indian spices so you know they have access to the best spices. They offer the usual roti and dosai plus some masala and fried meats plus a stunning fish head curry (not common in India, but a local delicacy). The Ghee Dosai is a heart stopper and very moreish, crispy, aromatic and so humble. Even their Gobi Manchurian (deep fried and spicy cauliflower) comes a notch better than most – it retains a crispy edge that goes well with the juicy and spicy insides. The Mutton Briyani has a homely feel about it - dry fluffy long grains covered in rich spices and rich chunks of muton masala, will entice you. The Fish Head Curry is not the easy-to-please tamarind and sharp tangy rendition but has a beautifully balanced infusion of masala in the curry. Not everything in the menu hits the spot here and we'll suggest you give the Tom Yum noodles a rethink, should you hanker for it, after seeing the item in the menu.
