Look closely as he cooks and you can imagine the tune he is “dancing” to as he cooks. When asked why he shuffles about when cooking, he says it’s a form of stress reliev and cure for the boring daily grind, and also a good little workout. His style of fried hokkien prawn noodles come drier than most (but that’s how it was back in the day) as he fries the stock into the noodles and ther e’s no sauce. The noodles are always moving about in the wok and this prevents over searing and it takes in the stock as he fries. As one of our food invigilators once said, “eat one strand of the noodle blindfolded, and you can tell it’s cha hae mee”.
