Alex is the son of the legendary, nicknamed “opium master” cha hae mee icon at Lor 29, Geylang back in the day. When his father passed on, he went sailing around the world and then came back to continue where he left off albeit in the Katong area, as his brother now runs the stall the father once operated in Geylang. His edge is of course the stock he uses, coupled with the charcoal fire he still insists on using till today. And his method, of frying the yellow and beehoon noodles thoroughly in that stock and then braising it covered with a wok lid, then with a second infusion of the stock, is the mojo here. The result is an overwhelming aroma of the fried and braised prawn stock noodles that’s punctured with the aroma of the smokey wood fire. You can smell it, no kidding. Alex runs the stall with his family and his daughter occasionally helms the wok and offers the same results as dad’s.
