This Teochew speciality sees duck or goose braised in herbs and soy sauce over low fire to achieve a soft texture. It is served in thin slices with rice, porridge or noodles that are drizzled with a special brown sauce

It's the control of fire and the patience in boiling the duck in a salt seasoned stock that yields this result...soft, not overly gamey nor salty. Ah Ee began in a stall in Upper Thomson over a decade ago, moved to Toa Payoh then shuttered down due to health concerns. Now this septuagenerian is back after 6 years and not a heartbeat is missed in his dish. He offers nothing else, just salted duck and a lightly flavoured rice with soup and their stinging garlic and lime chilli. His son helps out in this office building canteen. Note his short operation hours.

(pardon the pun). Their braised duck has a bold and nicely salted and lightly herbed soy braise sauce that is absorbed and tames the fowl. Which is why it is so comforting over their bowl of rice, and they slice the meat thinly so it does not feel too gamey. You have to dip that meat in their own-made vinegar and garlic chilli sauce to max that wild sensation in the mouth.
