Singapore, like many nations, saw an enlarged population of mainland Chinese among its populace these last 40 years. Naturally, their comfort food came along too. We see an enlarged menu of dumplings, pulled noodles, Szechuan mala cuisine and hotpots plus snacks, from all over China and the menu is growing.

This mainland Chinese couple has roosted in Singapore for almost 2 decades. The humble little half-stall hawker stall set-up belies what they can offer, from Zhajiangmian (minced meat noodles), chive pancakes to pot stickers… all freshly done on site. Their pot stickers are very comforting; the skin is not too thick and neither is the minced pork filling overwhelming. When they have the time, the platter comes like a space-ship with a film of thin crispy dough skin lined atop the moist and roasty pot stickers below. The layer of thin crispy dough skin gets rendered at the base of the stack of dumplings and they merely flip it over and serve.
