Ah Tai is the former head chef of his old boss (now competitor just meters away) at Tian Tian Chicken Rice. His poached-and-ice-cooled chicken is very soft and smooth and the rice is flavourful yet not too oily. He was the chef that cooked for and made the late Anthony Bourdain go "wow' upon his first bite of chicken rice over a decade ago, when he was still heading Tian Tian. His chilli, although looking a little pale, is bold and has enough of a limey, garlicky and spicy kick. That blended and braised soy sauce he spoons over the chicken gives the smooth chicken pieces a lift. His prices are a few notches south of his ex-boss's nearby.

This is possibly the most iconic name in modern day chicken rice history here after the legendary and now defunct Swee Kee at Middle Road. They began as a hawker decades ago but now have central kitchen operations with many outlets (currently 8). But most of the artisanal work is still practiced at the stalls, like making the rice and the fine art of chopping the chicken (theirs come chunky, soft, smooth and confidently chopped). Their rice has a bold chicken stock and garlic flavour and it's contained with sharp tangy chilli
