This septuagenarian (in her mid-70s) has been at it for over 3 decades. She is fastidious, and has a little scratchy attitude but be patient and she’ll release one well-fried Penang Char Kway Teow on you. She does it one plate at a time and is very diligent in her ways. She carefully spreads the noodles in the wok, so each strand gets enough wok heat. Her soy/stock sauce is very comforting, and it has “Penang” written all over it.

The master at wok here is an old disciple of the late, Mr Ng of Hill Street Cha Kway Teow in Bedok when they were one of the legendary hawkers at the defuncy Tong Chai Medical Hall hawkers by the Singapore River off the Merchant Road of yore, back in the 70s. He was a kid just buzzing about helping out and only after many years was he let near the wok. Now, understandably his version is quite similar to his old master's. It's very old school, very bold, well fried, and smooth and it will bring you back to the flavours of the 70s, sweet with caramel soy sauce, fish sauce, and a secret umami and savoury elements. The standard ingredients are all in place, little cockles, bean sprouts, lup cheong (chinese sausages), fishcakes, and bits of greens are all fried so expertly.
